Basil pesto is traditionally made with pine nuts, but pine nuts can be on the expensive end. With this recipe I've opted to use whatever nuts I have on hand which is usually almonds and walnuts since those are what I use the most. What I love about this recipe is that not only is it easy but it is pretty basic and that you can make it at a moments notice and spread it on pasta, pizza or even on toasted crusty bread with fresh garden tomato.

  • 1 cup fresh basil

  • 1/4 cup almonds (or whatever nut you have on hand)

  • 1/4 cup nutritional yeast

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • juice of 1 lemon

  • water to creamy consistency

Add all to a processor and blend until smooth. To make it a little creamier, add avocado and blend.

Basil pesto is a great addition to your dishes.

Or spread it on top of hearty toasted bread, add garden tomatoes and a sprinkle of black pepper and vegan parmesan if you like.
