Typically a Buddha Bowl is your main meal in a bowl that consists of a grain and surrounded by veggies. I love this one because of the hearty warm flavor of the quinoa, with the added bonus of the crispy tofu and sweet potato. Topped with a drizzle of this special creamy tahini dressing. I really put a lot of different food into this one. You can try this one or make up one on your own. Start with a grain, like quinoa or rice and then pile on the veggies and whatever else you can imagine.

Add in however much you desire -

cooked quinoa

edamame
-
greens
-
sliced cucumber

purple cabbage

oven baked sweet potatoes cubed (cooking time may vary if cubed).

crispy tofu
To prepare tofu:

Prepare by pressing tofu block and then cutting it into even cubes. Add cubes to a dish and coat them in about 2 tbsp of coconut aminos and let marinade, for about an hour. Pre-heat oven to 425 and line baking sheet with parchment paper. Once marinaded, discard any remaining coconut aminos and toss the tofu in about 3 tbsp of cornstarch and thoroughly coat.

Scatter onto baking tray and cook for 30 minutes, flipping halfway through. Check on them so they don't burn.
For the tahini dressing:
combine and whisk together

1/4 cup tahini

2 tbsp maple syrup

juice of 1 lemon

1 tbsp apple cider vinegar

1 tbsp garlic powder
-
water to thin for desired consistency
