chickpea salad sandwich
This is one of my favorite sandwiches to make and by far one of the most easiest. Not only is it super easy, but it is certainly flavorful and filling, too. When I was a kid, tuna sandwiches were my sandwich of choice, now it's this chickpea sandwich that is my go-to, and I am sure it will be yours, too.

ingredients:

1 can chickpeas or 1 cup cooked

2 stalks of celery, chopped

2 tbsp of diced pickles (or relish)

1/4 cup sunflower seeds (optional)

1/4 tsp garlic powder

1/4 tsp onion powder

1 tbsp vegan mayo

vegan bread of choice
method:

Drain and rinse chickpeas and add them to a bowl. Mash them with a fork while leaving some texture. Then add all of the ingredients and stir together being sure that everything is mixed.

Spread onto bread and add your favorite toppings, such as avocado, cucumber, lettuce, onion and tomato.

Serve with your favorite side dish like soup, salad, or oven-baked fries.
tip:
Easily swap out the vegan mayo and use a hint of mustard. If you prefer to have more of a "tunafish" or "sea" taste, you can add in some dulse flakes or even finely chop up a nori sheet and add that to your mixture. I used dill pickle spears for this which I think enhances the flavor. I did try this with a sweet relish, but personally prefer the dill pickle spears.
