These really are amazing and satisfy your sweet tooth. Hands down a better snack to have than any bar that you would buy in the store. Made with cacao powder, creamy nut butter, and the sweetness of dates - nature's candy. Takes out the use of conventional sugars and keeping it real. All rolled in coconut flakes. I like to pop a few in a silicone bag and take them with me for my lunch snack to work, or while I am out running errands.

ingredients:

1 cup pitted Medjool dates

1 3/4 cup old fashioned rolled oats

1/2 cup raw cacao

3 tbsp almond butter

2 tbsp chia seeds (optional)

1 tbsp cinnamon

1 tsp vanilla

1 tsp fine sea salt

method:

Place dates in bowl and fill with boiling water to soften. Let stand for 10 minutes. Drain.

Combine all ingredients into food processor except the coconut. Keep mixing and pulsing until mixture is broken down and mixed well. It should be a dough like consistency that is moldable. You will have to take the lid off often and scrape down the sides and keep mixing.

Once mixed, use teaspoon size portions, and roll into balls about inch in diameter each. Roll in coconut flakes for coating and transfer to baking sheet. Refrigerate for at least an hour.

These bits of delicious heaven are versatile. Mix and blend to a smooth and creamy consitency, or mix so that it is choppy for that bit of texture. If your coconut flakes are too big, give them a spin in the processor. Your single serving mixer is perfect for this. Also great for swapping out your favorite butters. Prefer peanut butter or sunflower butter? Add in raisins, too, or roll in chopped almonds. The possibilities are all up to you, and these chocolate balls are such great snacks to satisfy that sweet tooth. Store in the refrigerator.
