epic salad

Salads don't have to be boring and bland, and they aren't when I make them. Gone are those days of soggy iceberg lettuce, GMO tomatoes, cucumber and a couple of red onion slices that were served as your side when you went out to eat. You know what I am talking about. Try this one on for size. Build it however big you want, or take it down a notch. I often eat a pretty large salad as my meal and not only as my side dish or add on. For this one in particular, I used garbanzo beans, but you can use black beans, kidney beans or even hummus instead.

you will need for assembling:
  • spring mix for the salad

  • english cucumber 

  • cherry tomatoes

  • red onion sliced

  • can of chickpeas or any bean you desire

  • sunflower seeds

  • hemp seeds

go to dressing:

mix equal parts (or to your taste)

  • balsamic vinegar

  • mustard (yellow, stoneground, or spicy)

  • maple syrup
