
Green Goddess Dressing
When this dressing is called the goddess of all dressings, you better believe her. She doesn't lie. This green dressing has become one of my favorites, and for good reason. Whether it's for the creaminess or hint of tanginess, you can add this to virtually any salad or top a potato, pasta dinner of favorite grain bowl. Try it for yourself and tell me what you think.
Tip: Use whatever herbs you have on hand whether fresh or dried. Dried herbs have more potency of flavor, so if choose to substitute fresh herbs, it's best to increase the amount of fresh. Sample test as you go.
ingredients:

1/2 cup plain yogurt

1/2 avocado

2 tbsp apple cider vinegar

1 tsp maple syrup

juice of 1/2 lemon

1 tsp dried parsley (or 1/4 cup fresh parsley)

1 tsp dried basil (or a couple fresh leaves)

1 tsp garlic powder (or 1 clove)

1/2 tsp dried basil (or 1/4 cup fresh basil)

1/2 tsp onion powder (or 1/4 cup green onions)

salt and pepper to taste
method:

Add yogurt and avocado to a processor and blend.

Add juice of lemon and seasonings and blend together. Adjust seasonings to your liking.
I've seen different variations of the Green Goddess dressing. Create one to your liking, so if you don't like avocado for example, simply replace it with either more yogurt, tofu, or cashews. This one is fun to experiment with.
