creamy pasta + pesto

More often than not, if I am feeling a bit lazy or am in the mood for pasta, this is my absolute favorite and go-to. It's easy, creamy, and delicious!

easy vegan parmesean to add to your dishes

ingredients:
  • package of pasta (I like organic Penne)

  • 2 cups fresh basil

  • 1/4 nutritional yeast

  • 1 clove garlic or 1/4 tsp garlic powder

  • 1/4 cup nuts (walnuts, almonds, or cashews)

  • juice of lemon

  • 1 avocado

  • sundried tomatoes

directions:
  1. Cook pasta according to directions.

  2. To prepare the pesto - add the nuts to a processor and finely blend.Then add in basil, nutritional yeast, garlic, part of the lemon juice and blend. Scrape down sides. Add in more juice for desired consistency and blend more. 

  3. Once pesto is blended, add in avocado for creaminess. Use 1/2 or the whole avocado depending how creamy you'd like it.

  4. Once pasta is cooked, remove from heat and drain out water. With pasta back into the pot, add in the pesto and stir to coat pasta with the pesto.

  5. Add sun-dried tomatoes and stir.

tip:

If you don't have sun-dried tomatoes on hand, cherry tomatoes will work, too, but I love the pop of the sun-dried. I like the the bag of the sun-dried without the oil. I know some people will prepare their sun-dired in a bit of olive oil, but I find it unnecessary and will just stir them right into the pot.
