tomato + pesto pizza
I have been pretty addicted to this super easy and delicious pesto sauce. With minimal ingredients, you can have this made in a matter of seconds. Put it on pizza, artisan bread or pasta. Pesto is traditionally made with pine nuts, but those can be a bit expensive, so this will still taste delicious using whatever nuts you have on hand. It gives a break to the traditional cheese or veggie pizza. Let me know what you think.
ingredients:

1 personal size pizza crust

1 large tomato

2 cups packed basil

1/4 cup nutritional yeast

1 clove garlic or 1/4 tsp garlic

1/4 chopped nuts (walnuts, almonds or cashews)

juice of 1 lemon

water to consistency

Add the nuts to a processor and finely blend. Then add in the basil, nutritional yeast, garlic, and a part of the lemon juice and blend smooth.

You may have to scrape down the sides several times and keep blending. Add in more lemon juice and water to desired consistency.

Pre-heat oven according to package directions for the dough. Thinly slice the tomato. I usually will cook the dough half way through and then spread out the pesto and lay out tomato slices. Cook until done, let cool and enjoy. Top with vegan parmesan.
tip:
The pesto should be blended to a creamy consistency with a little bit of texture. You want to keep it spreadable and not too much of a liquid. You can also add in a little kale or spinach for even more added nutritional benefits.
