summer pasta salad
Summer pasta salad that is so simple it's crazy. Cool and refreshing lunch that is light with fresh garden cucumber, tomato, and cilantro with a light dressing. Add sliced avocado, eat as a side dish, or as a meal on its own. Serve with hearty whole grain bread, too.

ingredients:

8 oz. of pasta (I used penne)

1 cucumber
-
1/4 fresh cilantro
-
1/2 pint cherry tomatoes

1/4 cup green onions
For the dressing-

1 tbsp balsamic vinegar

1 tbsp mustard
-
1 tbsp maple syrup
method:

Cook pasta according to directions. Strain and rinse with cold water and set aside in bowl.

Cube cucumber and tomatoes. Chop cilantro and green onions. Add to food chopper and blend together. Do not over blend. Add in balsamic vinegar, mustard, and maple syrup.

Pour mixture over pasta and mix together. Chill in the refrigerator for at least 30 minutes before serving.
